Ready to Eat It Up

This, my friends, is the proverbial “life is a box of chocolates” chocolates.

(Actually, they are a box of amazing  Christopher Elbow Artisanal Chocolates! So amazing, in fact, I refuse to share with my children. Every man, woman and child for himself when it comes to the sweets! You know it had to be said.)

I am still trying to figure out this whole new job with more hours, blogger, mom, runner, me, balance thing. I feel like I am finally getting the hang of the job. It doesn’t occupy my mind off-hours as much as it did when I started mid-November. It probably didn’t help that I started right at the beginning of the holiday/stress season either. Now things are feeling more settled and I feel like I can breathe a bit. And breathing for me means blogging.  I can do it more often, hopefully, and not feel guilty about taking time away from other things.

I can’t wait to catch up with all of you!

Chocolate Toffee Strawberry Trifle

As promised and a couple days late, here is the recipe to the trifle I made for Mother’s Day.

Ingredients

  • 1 (5.1 oz) instant chocolate pudding mix
  • 1 package brownie mix for 13×9 pan
  • 1 large container Cool Whip, thawed
  • 2 Heath Bars
  • 1# fresh strawberries

Directions

  1. Bake brownies according to package directions. Cool.
  2. Crush Heath Bars.  I found it was easy to do by smacking the bars with a hammer lightly while still in the individual wrappers.
  3. Prepare pudding according to package directions; set aside.
  4. Cut the brownies into small bize-sized pieces.  Place half of the brownies in the bottom of a trifle dish or nice, large, glass bowl.
  5. Top brownies in trifle dish with half of the pudding, followed by half of the Cool Whip.  Next sprinkle one crushed Heath bar on top.  You can also add strawberries to this layer or wait to just put them on as a finishing layer (as in the photo above).
  6. Repeat all layers again.  Brownies, pudding, Cool Whip, Heath Bar, strawberries.
  7. Refrigerate for at least 4 hours before serving.

Healthy Living Survey

My days are all beginning to feel like I’m a part of the Groundhog Day movie.  Same thing all day, every day.  My pain was horrific on Sunday.  The worst it has been.  All I could do was sit and cry.  Yesterday was better than Sunday, but still ranked second pain-wise.  Today is feeling better, so far.  I am keeping up with my pain meds.  But goodness, they make me so tired and dopey.  I have a hard time connecting thoughts.  Feels like I am hearing/seeing everything from underwater.  Don’t like that feeling at all, but if it helps with the pain, I will do it.

As you can see, I don’t have a lot to blog about it.  So I found a healthy living survey that I thought might be fun.  And would require not much brain effort from me.  Perfect!

1.  What did you eat for breakfast?

I had a banana bread bagel with cream cheese and a cup of coffee with hazelnut creamer.  Actually, I am on my second cup of coffee today.  I know, my goal is to only have one cup a day, but I am trying to stay awake longer than one hour this morning.  Don’t judge me!

2.  How much water do you drink a day?  

I tend to drink 60-80 ounces a day.  I always have water with me.

3.  What is your current favorite workout? 

This one is hard to answer.  My favorite is trail running, but I can’t do that current.  I can’t do anything currently.  I am hoping to fall in love with aqua running soon!  Looks like I need a one-piece swimsuit.

4.  How many calories do you eat a day?

I have no idea.  Calories is not something I keep track of.  I track my food using the Weight Watchers 360 program.  It counts fat, carbs, protein and fiber.

5.  What are your favorite healthy snacks?

Bananas!  Grapes and apples are some other favorites.  Love that they are so portable.  I usually have some sort of fruit in my purse.

6.  What do you usually eat for lunch?

If I haven’t had an egg for breakfast, more likely than not, my lunch will include one.  Usually in the form of a veggie scramble.

7.  What is your favorite body part to strength train?

I just recently started strength training.  We had been working on arms and abs.  Arm flaps and muffin tops need to go!

8. What is your least favorite body part to strength train?

Hmm, I hate when I do too many stadium stairs that result in my calves hurting for days after.  Plus, we should all make sure we don’t end up with David Arquette calves!  Yikes.

9.  What are your “bad” food cravings?

I like most foods, and sadly, they seem to like me, too.  But I do try to limit some foods, such as greasy things.  They make me feel yuck.  And chocolate.  I don’t think it’s bad, but I try not to overdo it.  Because lord knows if there is one thing I can overdo it on, it would be chocolate.

10.  Do you take vitamins or supplements?

I take a women’s multivitamin, a B-12 and a vegetarian DHA.  And since breaking my ankle, I am considering taking a calcium supplement.  I have taken these Viactiv Calcium Supplement Soft Chews before and really liked them.  Think it’s time to start back on them.

11.  How often do you eat out?

I really don’t like to eat out (or spend the money to eat out!) more than once a week.

12.  Do you eat fast food?

Sometimes.  I generally have an idea of what the best option will be for me to eat at any given place.  Like Wendy’s.  There I will order a baked potato and a garden side salad.  Some places I avoid entirely because there is not a good option for me.  Like McDonald’s.  Nothing there I care to eat.  But I do appreciate the fact that most fast food restaurants now offer some sort of fresh fruit option in place of fries.

13.  Who is your biggest supporter?

My girls.  They know how important it is for me to be active and I love inspiring them to do the same.  One of my proudest moments is when a friend of my 15 year old daughter asked me about running because my daughter had told her I was a runner.  Me!?  A runner!!

14.  Do you have a gym membership?

Yes, I do.  My girls and I all belong to the Y.  We have been members for 7 years now, I think.  We totally get our money’s worth!  I use it for the machines, the classes and pool (soon!).  Sassy likes the machines, the pool and will be started classes with me as soon as I am allowed.  OMG Becky has been taking PiYo, Yoga and Pilates with me for years.  She recently decided the treadmill isn’t so bad either.

15.  How many hours of sleep do you get a night?

I almost always get 7-9 hours a night.  I can’t function, if I don’t.  And my sleep is much improved since getting a contour pillow.  My sleep is much more restful.  No more waking up with neck pain or headaches.

16.  Do you have a “cheat” day?

I don’t have an official cheat day, but I am a little more lax on the weekends vs. the rest of the week.

17.  Do you drink alcohol?

I would be what I consider a social drinker.  I don’t drink at home, but I will have a drink when I go out with friends.  Mojitos are my favorite drink splurge!

18.  Do you have a workout buddy?

These two girls again!  They are always up for an adventure!  They motivate me to go for a run or walk around the subdivision.  They also call me out if I have one too many treats!  I love that they enjoy being active just as much as I do.

19. What is the best thing that has changed about your life since committing to a Healthy Lifestyle?

I think the best thing that has changed is my relationship with my daughters.  I think being active together has given us the opportunity to bond on a different level.  Hiking in the woods opens the door to conversations that we might not of had otherwise.

20. What was the last healthy thing you did?

Refilled my water cup!

Will Run for Cupcakes

Today was race day!  My third 5K and Sassy’s first.  This was a smaller race with less than 600 runners.  The start line would be one of only a couple of times I would see her.  The race started and she took off!

I finally saw her running the opposite direction at the first of two turn-arounds.  It was then I realized I had only seen one girl her age ahead of her.  I then started watching for others to see how close they were to her.

After the second turn around, I noticed she was still behind just the one girl.  I then thought she might actually medal!

She was waiting at our meeting tent as I came through the finish line.  My goal this race was to not walk.  I didn’t walk AND I shaved 2.5+ minutes off my PR!  Color me surprised.  I placed 12th in my age division.  Not too shabby for what was my longest run since before my wreck in August.

I really wish we had dressed up for this Valentine’s Day themed-race.  We saw some cute outfits!  I was jealous, but dressing up had totally slipped my mind.  So unlike me!

A friend of mine also ran this race.  It was her first in months, also.

Did I mention it was freezing?  Literally freezing.  Only 29 degrees, with a wind chill of 17.  So very cold.

So we made the most of the situation and we went in search of the cupcakes!  There were also bananas, water, and six types of Balance and Kind bars.

We tried hanging out for the awards ceremony, making new friends along the way.

But it was too cold!  We went to wait in the car for awhile.  Finally we heard the MC calling for all runners.  We quickly grabbed our blankets as an outer layer and headed to the ceremony.

And then came the big moment!  Winners in the female 11-14 year old category   They named third place.  Not Sassy.  They named second place.  Not Sassy!  First place?  SASSY!  She won 1st place in her age division in her very first race!!

If you are wondering about the little girl I saw in front of her, she was only 10 years old.  She won 1st place in a younger age division.

After the ceremony, my dad sent me a text asking where we were.  He thought Sassy’s win was reason to party.  So the party was on!  Or at least as much as you can party that early in the morning when half frozen.  To iHop we went!

Hearts Day

Happy Valentine’s Day!

I woke up to two daughters very excited to share the gift they bought me.  And what was it?…  It was a fairly large box of chocolates.  Love chocolate!! They know me so well.   And a homemade card.  I’m a lucky, lucky mom!
